Description
Bun bo is one of the specialties of Hue, although this noodle dish is popular in all three regions of Vietnam and among Vietnamese people overseas. In Hue, this dish is simply called “bun bo” or more specifically “bun bo gio heo”. Other localities call it “bun bo Hue”, “bun bo gio Hue” to indicate the origin of this dish. The main ingredients of the dish are vermicelli, beef shank, pork leg, and a broth with a characteristic red color and the flavor of lemongrass and shrimp paste. Sometimes the bowl of noodles is also added with rare beef, crab cakes, and other ingredients depending on the preferences of the cook.
